It is 20 metres underground, in the heart of the crayères, that you will discover the slow maturation of the wines. 

In 1810 Barbe Nicole Ponsardin, the first woman to run a champagne house, created her first vintage. 
Endowed with an uncommon strength of character and a keen sense of business, this "Grande Dame of Champagne" also invented the "riddling table" process in 1816.  

The cellars of Veuve Clicquot Ponsardin are the ideal setting for a meal combining the refinement of the dishes with the complexity of the wines of Champagne.
