The passion for the cultivation of the vine and the elaboration of champagne has animated the House of Bijotat for more than a century. Bernard and Sébastien, assisted by a trustworthy staff, work on 10 hectares according to the principles of integrated viticulture with the greatest respect for the environment. It is on the slopes of Romeny-sur-Marne, Chézy-sur-Marne and Villiers-Saint-Denis that the harvest of the three grape varieties is prepared. Pinot Meunier, Pinot Noir and Chardonnay make up our different vintages. Some of these will be matured in French oak tuns, in order to flatter your taste buds as much as possible. Determined, patient and inventive, Bernard and Sébastien are the guarantors of the House's signature.
