The vineyard of the Crézancy Agricultural and Viticultural High School produces Champagne Delhomme. 200 students harvest the grapes by hand and the students in viticultural training accompany all the stages of the winemaking process. Three grape varieties are blended to give five qualities: brut tradition, blanc de blancs, demi-sec, rosé and Cuvée vintage. Among the particularities of the production: the use of a wooden Coquard press, the stirring on a desk, the commitment in the reasoned phytosanitary fight and forty acres in conversion to organic farming.
